A creamy, no-bake Biscoff ice cream sandwich cake layered with cookie butter whipped topping and crunchy Biscoff cookies. An easy frozen dessert perfect for parties and warm-weather gatherings.

Ingredients

  • 24 vanilla ice cream sandwiches
  • 2 (8 ounce) tubs whipped topping, thawed (divided use)
  • 1 cup Biscoff cookie butter (divided use)
  • 1 teaspoon vanilla extract
  • 10 Biscoff cookies, crushed, plus extra for garnish

Instructions

  1. In a large mixing bowl, fold together one tub of whipped topping, 3/4 cup Biscoff cookie butter, vanilla extract, and 10 crushed Biscoff cookies until combined.
  2. Arrange a layer of ice cream sandwiches in the bottom of a 9×13-inch baking dish, cutting the sandwiches as needed to fit evenly.
  3. Spread half of the Biscoff whipped topping mixture evenly over the ice cream sandwiches.
  4. Add another layer of ice cream sandwiches on top.
  5. Spread the remaining Biscoff whipped topping mixture evenly over the second layer.
  6. Add a final layer of ice cream sandwiches, pressing down gently if necessary.
  7. Spread whipped topping from the second tub evenly over the top, using as much as desired.
  8. Warm the remaining 1/4 cup Biscoff cookie butter in the microwave for 15-20 seconds, or until pourable. Drizzle it over the whipped topping and gently swirl with a knife or toothpick.
  9. Sprinkle additional crushed Biscoff cookies over the top.
  10. Cover tightly and freeze for at least 6 hours or overnight. Slice and serve frozen.

Notes

  • For crunchy cookie pieces on top, wait to add the crushed Biscoff cookies until just before serving.
  • The amount of whipped topping used for the final layer can be adjusted to taste.
  • Freeze for at least 6 hours for clean, firm slices; overnight freezing works well.
  • Keep leftovers tightly covered in the freezer.
