This Biscoff Tiramisu is a rich, creamy no-bake dessert layered with coffee-soaked speculoos cookies and a luscious mascarpone filling. Finished with cocoa and cookie crumbs, it’s an irresistible twist on the classic Italian favorite.

Ingredients

  • ⅓ cup espresso coffee
  • 1 teaspoon sugar
  • 1 tablespoon water
  • 3 egg yolks
  • ½ cup sugar
  • 1 cup mascarpone
  • 1 tablespoon speculoos butter (Biscoff or Trader Joe’s), plus more for extra layers if desired
  • 8.8 oz speculoos cookies
  • 1 tablespoon unsweetened cocoa powder

Instructions

  1. Prepare the espresso coffee and stir in 1 teaspoon of sugar while hot. Set aside to cool.
  2. Set up a double boiler by placing a heatproof bowl over barely simmering water without letting the bowl touch the water.
  3. Beat the egg yolks with the remaining ½ cup sugar off the heat for a few minutes. Place the bowl over the double boiler and continue beating until the mixture reaches 150°F (65°C). Beat for 2 more minutes, then remove from the heat and cool, stirring occasionally.
  4. Mix the mascarpone and speculoos butter into the cooled egg mixture until smooth.
  5. Pour the cooled coffee into a shallow bowl.
  6. Quickly dip each speculoos cookie into the coffee and arrange in a serving platter, dish, or individual glasses. Spread half of the mascarpone mixture over the cookies.
  7. Repeat with the remaining dipped cookies to create a second layer.
  8. Spread the remaining mascarpone mixture evenly over the top. Cover and refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, sprinkle with crushed speculoos cookies and dust generously with unsweetened cocoa powder.
  10. Slice into portions or serve from individual glasses.

Notes

  • Do not soak the cookies for too long or they may become overly soft.
  • Chilling overnight provides the best texture and flavor.
  • Add extra layers of speculoos butter between the cookies and filling for a richer dessert.
  • Use pasteurized eggs if preferred for added food safety.
