Juicy blackened chicken breasts coated in a bold, smoky spice blend, quickly seared in a hot skillet and finished in the oven.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons paprika
  • 1 teaspoon cayenne pepper
  • ½ teaspoon black pepper (freshly cracked)
  • 1 tablespoon dried thyme
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt (thick flakes, if possible)
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Preheat the oven to 450°F.
  2. Heat an oven-safe skillet over high heat for approximately 5 minutes.
  3. Combine the paprika, cayenne pepper, black pepper, thyme, garlic powder, onion powder, and salt in a small bowl.
  4. Brush the chicken breasts with olive oil and generously coat them with the spice mixture, patting the seasoning onto the chicken.
  5. Place the chicken breasts in the hot skillet and cook for 30 seconds to blacken. Flip and cook for another 30 seconds on the other side.
  6. Transfer the skillet to the oven and cook for 10 minutes or longer, until the internal temperature of the chicken reaches 165°F.
  7. Transfer the chicken to a covered serving dish and let it rest for 5 minutes.
  8. Slice and serve.

Notes

  • For the best blackened crust, make sure the skillet is very hot before adding the chicken.
  • Cooking time may vary depending on the thickness of the chicken breasts; always verify doneness with an internal temperature of 165°F.
