Blueberry Baked Oats

Warm and comforting blueberry baked oats blended until smooth and naturally sweetened with banana and maple syrup. Juicy blueberries and chai spice make this an easy breakfast for two.

Ingredients

  • 1 cup old fashioned rolled oats
  • 1 ripe banana
  • 1 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon chai spice (or ground cinnamon)
  • 2 tablespoons maple syrup
  • 1/3 cup frozen blueberries (or fresh blueberries)

Instructions

  1. Preheat oven to 375 degrees F.
  2. Blend the oats, almond milk, banana, baking powder, chai spice, and maple syrup in a high-speed blender until fully combined and the oats have broken down, about 30 seconds to 1 minute.
  3. Divide the oat mixture between two 10-ounce ramekins or small baking dishes and top with the blueberries.
  4. Bake for 30 minutes, until the baked oats are set and lightly golden on top.

Notes

  • Ground cinnamon can be used instead of chai spice.
  • Fresh or frozen blueberries both work well; frozen blueberries do not need to be thawed first.
  • Serve warm directly from the ramekins.
