Ingredients

  • 1 cup (226g) unsalted butter
  • 1 ¼ cups (250g) granulated sugar
  • ½ cup (100g) brown sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs + 1 egg yolk
  • ¾ cup (95g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ cup (90g) chocolate chips or chunks

Instructions

  1. Brown the Butter: In a saucepan over medium heat, melt the butter. Continue cooking, swirling occasionally, until it turns golden brown and has a nutty aroma (about 5 minutes). Remove from heat.
  2. Mix the Sugars & Cocoa: Immediately whisk in granulated sugar, brown sugar, cocoa powder, and salt while the butter is still warm. This helps create that crackly top.
  3. Add Eggs & Vanilla: Let the mixture cool slightly, then whisk in the eggs and vanilla extract one at a time until smooth.
  4. Incorporate Dry Ingredients: Sift in the flour and baking powder, then fold until just combined. Stir in chocolate chips.
  5. Bake: Pour batter into a greased or parchment-lined 8×8-inch pan. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  6. Cool & Serve: Let the brownies cool completely before slicing for the best texture.
