Bruschetta

A fresh and flavorful Italian appetizer made with juicy tomatoes, basil, garlic, and quality olive oil served over crisp toasted bread.

Ingredients

  • 3 tomatoes (preferably organic, heirloom or homegrown)
  • 1 clove garlic (OPTIONAL (fresh))
  • 3 leaves basil (fresh)
  • 2 Tbsp extra virgin olive oil (good quality)
  • ½ tsp Kosher salt (or sea salt)
  • 8 slices of toast (to serve, try to use a crusty Italian loaf, ciabatta or a baguette)

Instructions

  1. Grill or toast the bread. Brush it with a little oil and place it into a griddle or barbecue grill if desired.
  2. If using garlic, rub a cut side of the garlic onto the toasted bread slices, or finely chop the garlic.
  3. Dice the tomatoes into small cubes or chunks and place them into a medium sized bowl.
  4. Add the garlic to the tomatoes.
  5. Chop one or two large basil leaves into little pieces and add them to the bowl with the tomatoes and garlic.
  6. Add the extra virgin olive oil and Kosher or sea salt to taste. Mix well and adjust seasoning if needed.
  7. Just before serving, top each toast with some tomato topping and serve immediately to keep the bread crisp.

Notes

  • Use a crusty Italian loaf, ciabatta, or baguette for the best texture.
  • Add the tomato topping just before serving to prevent soggy toast.
  • Fresh, ripe tomatoes and good quality olive oil provide the best flavor.
