Creamy, spicy buffalo chicken pinwheels packed with cheese and bold flavor, perfect for parties and easy make-ahead appetizers.

Ingredients

  • 8 ounces cream cheese, softened
  • 5 ounces Frank’s Red Hot Original Sauce
  • 1/2 cup blue cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 cup Colby-Jack cheese, shredded
  • 1/3 cup green onions, chopped
  • 1 rotisserie chicken, shredded (about 3 cups)
  • 5 large flour tortillas

Instructions

  1. In a large mixing bowl, combine cream cheese, hot sauce, blue cheese, salt, garlic powder, Colby-Jack cheese, and green onions. Mix with a hand mixer until smooth and well blended.
  2. Add shredded chicken to the mixture and stir until all chicken is evenly coated.
  3. Spread about 3/4 cup of the mixture evenly over each tortilla, then roll tightly.
  4. Wrap each roll in plastic wrap and refrigerate for 2 to 4 hours to firm up.
  5. Remove from the refrigerator, unwrap, and slice into pinwheels using a sharp knife. Discard the ends.
  6. Serve immediately.

Notes

  • Can be made a day in advance and stored in the refrigerator.
  • Substitute ranch dressing for blue cheese if preferred.
  • Use low-fat cream cheese for a lighter version.
  • Keep tightly wrapped to prevent tortillas from drying out.
