Ingredients
2 tablespoons olive oil
1/2 cup (1 stick) unsalted butter, cut into 8 pieces, divided
2/3 cup finely minced shallots, from 2 medium shallots
3 cloves garlic, minced
2 lb shrimp (21/25), peeled and deveined, thawed if frozen
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon lemon zest, from 1 lemon
4 tablespoons fresh lemon juice, from 2 lemons, plus more to taste
1 tablespoon + 1 teaspoon whole grain mustard
3 tablespoons finely chopped fresh dill
Lemon wedges, for serving (optional)
Instructions
Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the shallots and cook, stirring frequently, until softened but not browned, about 3 to 4 minutes.
Add the garlic and cook, stirring constantly, for 1 minute, being careful not to brown it.
Add the shrimp, salt, and pepper. Cook, stirring occasionally, until the shrimp begin turning pink and are partially cooked, about 2 to 3 minutes.
Add the lemon zest, lemon juice, and mustard. Reduce the heat to low and add the remaining butter 2 tablespoons at a time, stirring until melted and emulsified into a creamy sauce.
Continue cooking until the shrimp are fully cooked through. If needed, allow them to rest in the warm sauce for an additional minute.
Remove from heat and stir in the fresh dill. Adjust seasoning with additional lemon juice, salt, or pepper if needed.
Serve warm with lemon wedges, crusty bread, or over rice to soak up the sauce.
