Cajun Shrimp Foil Packets are a hearty, flavor-packed meal featuring shrimp, smoked sausage, corn, and potatoes all seasoned with bold Cajun spices and cooked together in easy foil packets. Perfect for grilling or baking with minimal cleanup.

Ingredients

  • 12 pieces corn on the cob (4 full cobs cut into thirds)
  • 4 red potatoes, washed and cubed (about 4 cups petite halved)
  • 25 uncooked shrimp, peeled or unpeeled
  • 1 pound smoked sausage, cut into chunks
  • 1/2 cup melted butter (or olive oil)
  • 1/2 cup chicken broth (as needed)
  • Cajun/Creole seasoning, to taste
  • Salt and pepper, to taste
  • Fresh lemon wedges, for garnish
  • Extra melted butter (optional, for serving)

Instructions

  1. Preheat grill or oven to 400°F and prepare all ingredients.
  2. Divide corn, potatoes, shrimp, and sausage evenly among 4 heavy-duty foil sheets.
  3. Place shrimp toward the top of each packet so they are less exposed to direct heat.
  4. Drizzle each packet with melted butter and about 2 tablespoons of chicken broth.
  5. Season generously with Cajun seasoning, salt, and pepper.
  6. Fold foil tightly over ingredients to seal each packet completely.
  7. Cook on the grill or in the oven for 30 to 40 minutes, flipping once halfway through, until potatoes are tender.
  8. Carefully open packets, allowing steam to escape, and serve immediately with lemon wedges and optional melted butter.

Notes

  • Use heavy-duty foil to prevent tearing during cooking.
  • Cut potatoes into small, even pieces so they cook through in time.
  • Adjust Cajun seasoning based on spice preference.
  • Packets can also be baked in the oven if grilling is not available.
