Caramel Apple Cake

A comforting autumn apple cake with tender fruit, warm spice and a rich caramel finish. Perfect for an indulgent seasonal dessert or afternoon treat.

Ingredients

  • 200 g unsalted butter, softened
  • 200 g light brown sugar
  • 3 large eggs
  • 200 g self-raising flour
  • 1 teaspoon ground cinnamon
  • 2 eating apples, peeled, cored and chopped
  • Caramel sauce, for finishing

Instructions

  1. Preheat the oven to 180°C, fan 160°C, gas 4. Grease and line a cake tin with baking paper.
  2. Beat the softened butter and light brown sugar together until pale and fluffy.
  3. Beat in the eggs one at a time, adding a little flour if the mixture starts to curdle.
  4. Fold in the remaining flour and cinnamon until combined, then gently fold in the prepared apples.
  5. Spoon the mixture into the prepared tin and level the surface.
  6. Bake until the cake is golden, risen and a skewer inserted into the centre comes out clean.
  7. Leave to cool in the tin briefly before transferring to a wire rack.
  8. Finish with caramel sauce before slicing and serving.

Notes

  • Choose firm eating apples that will retain some texture during baking.
  • Serve warm or at room temperature with extra caramel sauce.
  • Store the cooled cake in an airtight container for up to 3 days.
