A juicy grilled beef burger topped with melted Jarlsberg cheese, sweet balsamic caramelized onions, and peppery fresh arugula on a toasted bun.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 extremely large onion (peeled and thinly sliced; about 5 cups sliced)
  • 1/4 cup water (slightly more or less as needed)
  • 1/2 teaspoon salt
  • 2 tablespoons balsamic vinegar
  • 1 1/4 pounds ground chuck (80/20 or 85/15 ground beef work well for burgers)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 good-quality buns (split and toasted)
  • 4 ounces sliced Jarlsberg cheese (or any Swiss cheese you like)
  • 2 cups fresh arugula

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the sliced onion and cook until deep golden and caramelized, about 30 minutes, stirring occasionally. Add a splash of water whenever the onion begins to stick or get too dark, and reduce the heat as needed to prevent burning.
  2. Once the onion is caramelized, stir in 1/2 teaspoon salt and the balsamic vinegar. Cook for about 1 minute, scraping up the browned bits from the bottom of the skillet. Remove from the heat.
  3. Place the ground chuck, Worcestershire sauce, garlic powder, 1 teaspoon salt, and black pepper in a large bowl. Gently combine with your hands, then shape the mixture into 4 patties.
  4. Preheat a grill to medium-high heat. Grill the burgers for 3 to 5 minutes per side, or until they reach your desired doneness. For food safety, ground beef should reach an internal temperature of 160°F.
  5. Top each burger with sliced Jarlsberg cheese and allow it to melt. If desired, place the split buns on the grill for about 20 seconds, or until lightly toasted with grill marks.
  6. Place the burgers on the toasted buns and top each with caramelized onion and fresh arugula. Serve immediately.

Notes

  • Swiss cheese can be substituted for Jarlsberg cheese.
  • Add water to the onions a little at a time during caramelization to prevent sticking or burning.
  • Adjust the skillet heat as necessary so the onions caramelize slowly without burning.
  • Ground beef should reach an internal temperature of 160°F for food safety.
