Cattle Drive Casserole is a hearty comfort-food bake with seasoned ground beef, beans, tomatoes, peppers, creamy cheese, and golden biscuits. It is perfect for busy weeknights, potlucks, and family dinners.

Ingredients

  • Ground beef
  • Yellow onion
  • Poblano peppers
  • Garlic
  • Taco seasoning
  • Diced tomatoes with green chiles
  • Pinto beans
  • Sour cream
  • Shredded cheddar cheese
  • Shredded Monterey Jack cheese
  • Refrigerated biscuit dough
  • Fresh cilantro, optional for garnish

Instructions

  1. Preheat the oven and lightly grease a 9×13-inch baking dish.
  2. Cook the ground beef in a large skillet until browned, then drain any excess grease.
  3. Add the chopped onion, poblano peppers, and garlic, and cook until softened.
  4. Stir in the taco seasoning, diced tomatoes with green chiles, and pinto beans. Simmer for several minutes to combine the flavors.
  5. Spread the beef mixture evenly into the prepared baking dish.
  6. Mix the sour cream with the shredded cheddar and Monterey Jack cheeses, then spread the mixture over the beef layer.
  7. Arrange the refrigerated biscuit dough evenly over the top.
  8. Bake until the biscuits are golden brown and fully cooked and the casserole is bubbling around the edges.
  9. Let the casserole rest for about 10 minutes before serving. Garnish with chopped cilantro if desired.
