This Cauliflower Baked Ziti is a healthy, low-carb twist on the traditional baked ziti, made with roasted cauliflower instead of pasta and layered with rich tomato sauce, creamy ricotta, and melted mozzarella.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • Salt & pepper to taste
  • 2 cups marinara sauce
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Fresh basil (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread on the baking sheet and roast for 25 minutes until lightly browned.
  3. Reduce oven temperature to 375°F (190°C).
  4. In a baking dish, spread half of the marinara sauce. Add the roasted cauliflower, then spoon ricotta over the top.
  5. Pour remaining marinara sauce over cauliflower. Sprinkle with mozzarella, parmesan, oregano, and garlic powder.
  6. Bake for 25-30 minutes until cheese is bubbly and golden.
  7. Remove from oven and let cool slightly. Garnish with fresh basil before serving.

Notes

  • Use your favorite marinara or homemade for best flavor.
  • You can add sautéed spinach or mushrooms for extra veggies.
