Ingredients
1/2 pound ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
4 tablespoons butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
1/4 cup all-purpose flour
2 cups cubed Cheddar cheese
1 1/2 cups milk
1/4 cup sour cream
Instructions
Cook the ground beef in a large pot over medium heat until browned. Drain excess fat and set the beef aside.
Melt 1 tablespoon butter in the pot. Add onion, carrots, celery, basil, and parsley and cook until the vegetables are tender.
Add chicken broth, potatoes, and cooked beef. Bring to a boil, then reduce the heat, cover, and simmer until the potatoes are tender, about 10 to 12 minutes.
Meanwhile, melt the remaining 3 tablespoons butter in a small saucepan. Stir in the flour and cook until smooth and bubbling.
Gradually stir in the milk and cook until the mixture is smooth and thickened.
Stir the milk mixture into the soup. Bring to a gentle boil and cook for about 2 minutes.
Reduce the heat to low and stir in the Cheddar cheese until melted.
Remove from the heat and stir in the sour cream. Serve warm.
Notes
Use freshly shredded or cubed Cheddar for smooth melting.
Do not boil the soup after adding the cheese and sour cream, as excessive heat can cause the dairy to separate.
Store leftovers covered in the refrigerator and reheat gently over low heat.
