These cheesecake-stuffed strawberries are a delicious no-bake dessert featuring fresh, juicy strawberries filled with a rich, creamy cheesecake mixture and topped with crunchy graham cracker crumbs. Perfect for parties, holidays, or an easy bite-sized sweet treat.

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 1 pint fresh strawberries, hulled and cored
  • 3 graham crackers, crushed, or as needed

Instructions

  1. Place the softened cream cheese, confectioners’ sugar, and vanilla extract in a mixing bowl. Beat with an electric mixer until smooth, creamy, and fluffy.
  2. Wash the strawberries thoroughly and pat them dry with paper towels.
  3. Remove the green tops and carefully hollow out the centers of the strawberries using a small paring knife or melon baller, creating enough space for the cheesecake filling.
  4. Transfer the cream cheese mixture to a piping bag fitted with a decorative tip or a resealable plastic bag with one corner snipped off.
  5. Pipe the cheesecake filling into each hollowed-out strawberry, allowing a small swirl of filling to rise above the top.
  6. Sprinkle the crushed graham crackers over the cheesecake filling or gently dip the filled tops into the crumbs.
  7. Arrange the stuffed strawberries on a serving platter and serve immediately, or refrigerate until ready to enjoy.

Notes

  • Use large, firm, ripe strawberries for easier filling and the best presentation.
  • Allow the cream cheese to soften at room temperature before mixing to achieve a smooth, lump-free filling.
  • For a neater presentation, use a piping bag with a star-shaped tip.
  • Make sure the strawberries are completely dry before filling to prevent the cheesecake mixture from becoming watery.
  • For extra flavor, garnish with mini chocolate chips, chocolate drizzle, or finely chopped nuts.
  • For a gluten-free variation, replace the graham crackers with gluten-free cookie crumbs.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days. For the best texture, add the graham cracker crumbs just before serving.
  • Nutrition values are approximate and depend on strawberry size, filling quantity, and the number of servings.
