These cheesecake stuffed strawberries are a quick and delicious no-bake treat filled with a creamy cheesecake-inspired protein filling. Finished with crushed graham crackers, they make a perfect bite-sized dessert or snack.

Ingredients

  • 1 lb fresh strawberries, washed and patted dry (about 24 large strawberries)
  • 1/2 cup plain full-fat Greek yogurt
  • 2 oz cream cheese, softened to room temperature
  • 1 scoop vanilla whey protein powder
  • Crushed graham crackers, for topping

Instructions

  1. Slice the tops off the strawberries and trim a small sliver from the bottom of each so they can stand upright.
  2. Using a small spoon, paring knife, or metal teaspoon, carefully hollow out the center of each strawberry to create space for the filling.
  3. In a mixing bowl, combine the Greek yogurt and softened cream cheese.
  4. Using a hand mixer on medium speed, whip until smooth and fluffy, scraping down the sides of the bowl as needed.
  5. Add the vanilla whey protein powder and mix until fully combined and smooth.
  6. Transfer the filling to a piping bag or a zip-top bag with the corner cut off.
  7. Pipe the filling into each hollowed strawberry until full, or spoon the filling into the strawberries if preferred.
  8. Sprinkle the filled strawberries with crushed graham crackers.
  9. Serve immediately or refrigerate until ready to serve.
