Ingredients
1 lb asparagus
2 tablespoons olive oil
Salt and pepper, to taste
4 cloves garlic, minced
1 cup Gruyere cheese (or Parmesan), shredded
5 slices bacon, cooked and chopped
Instructions
Preheat oven to 400 F.
Trim the tough ends from the asparagus. Place asparagus in a medium-sized casserole dish.
Drizzle asparagus with olive oil, season with salt and pepper, and sprinkle minced garlic evenly over the top.
Bake uncovered for 10 minutes at 400 F. Remove from the oven.
Sprinkle half of the shredded Gruyere cheese over the asparagus. Add the cooked and chopped bacon, then sprinkle the remaining cheese on top.
Return to the oven and bake uncovered for another 10 minutes, until the asparagus is tender and the cheese is melted.
Serve immediately while the cheese is warm and melty.
Notes
Thin asparagus stalks cook faster than thick stalks. Adjust baking time according to thickness.
For crisp-tender asparagus, reduce baking time slightly. For softer asparagus, bake a few minutes longer.
Parmesan cheese can be substituted for Gruyere cheese.
Cook bacon until crispy before adding it to the casserole.
Season lightly with salt because bacon and cheese already contain sodium.
Serve with grilled chicken, steak, or baked salmon.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
