Cheesy Beef Pockets are crispy baked tortilla triangles stuffed with seasoned ground beef, peppers, onions, and plenty of melted cheese, then brushed with savory garlic butter.

Ingredients
1 pound ground beef (lean ground beef works well)
1 red bell pepper, diced (optional, can use other colors)
½ cup diced yellow onion
½ cup water
3 Tablespoons tomato paste
1 ounce packet taco seasoning
2 garlic cloves, minced
3 Tablespoons butter, melted (salted or unsalted)
½ teaspoon garlic powder
½ teaspoon dried parsley
3 (8-inch) flour tortillas
1 cup shredded provolone and mozzarella cheese blend
¼ cup shredded cheddar cheese
Instructions
Add the ground beef, diced red bell pepper, and diced yellow onion to a large skillet. Brown and crumble the beef, cooking until fully cooked. Drain any excess grease.
Add the water, tomato paste, taco seasoning, and minced garlic to the skillet. Stir and cook for 3–4 minutes, until the liquid has reduced. Remove from the heat.
Preheat the oven to 400°F.
In a small bowl, combine the melted butter, garlic powder, and dried parsley. Brush some of the garlic butter over the bottom of a 9-inch round baking dish and reserve the remainder.
Cut each tortilla in half to make 6 pieces. Divide the meat mixture into 6 portions. Fill each tortilla half with ⅙ of the meat mixture and ⅛ cup of the provolone and mozzarella cheese blend.
Fold each filled tortilla into a triangle and place seam-side down in the prepared baking dish.
Brush the tops of the tortillas with the remaining garlic butter. Sprinkle the remaining provolone and mozzarella blend and the cheddar cheese over the top.
Bake for 15–20 minutes, or until the cheese is melted and the tortilla edges are golden brown.
If desired, sprinkle additional dried parsley over the top before serving.
Notes
Bell pepper is optional and any color can be used.
Either salted or unsalted butter works well.
Oven temperatures and baking times can vary, so use the golden-brown tortilla edges as the best indication of doneness.
Serve warm while the tortillas are crisp and the cheese is melted.
