Ingredients
1 pound asparagus spears, ends trimmed
2 tablespoons olive oil
4 cloves garlic, minced
3/4 teaspoon sea salt, more to taste
3/4 cup shredded mozzarella cheese
3/4 cup smoked white cheddar cheese
Cracked black pepper, to taste
Instructions
Preheat the oven to 425°F. Arrange the asparagus in a single layer on a rimmed baking sheet.
Drizzle the olive oil over the asparagus. Sprinkle with sea salt and minced garlic, then toss to coat evenly. Spread the asparagus back into a single layer.
Bake for 10 minutes, or until the asparagus is just tender and still bright green.
Remove the baking sheet from the oven and sprinkle the mozzarella and smoked white cheddar evenly over the asparagus.
Switch the oven to broil on high and broil for about 5 minutes, or until the cheese is bubbling and golden brown.
Top with cracked black pepper before serving. Add more salt to taste if desired.

Freshly grated cheese melts more evenly than pre-shredded cheese.
