Ingredients
1 sheet puff pastry, thawed
1 cup roasted red peppers, drained and chopped
1 cup shredded cheese (such as mozzarella or cheddar)
2 tablespoons cream cheese, softened
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon dried herbs (such as oregano or Italian seasoning)
Salt and pepper to taste
1 egg, beaten (for egg wash)
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the puff pastry on a lightly floured surface into a rectangle.
In a bowl, mix roasted peppers, shredded cheese, cream cheese, olive oil, garlic, herbs, salt, and pepper.
Spread the mixture evenly over the pastry, leaving a small border around the edges.
Roll the pastry tightly into a log, then slice into even pinwheels.
Place the pinwheels on the prepared baking sheet and brush with beaten egg.
Bake for 15–20 minutes, or until golden brown and puffed.
Allow to cool slightly before serving.
Notes
Use store-bought or homemade roasted peppers for best flavor.
Try different cheeses like feta or goat cheese for variation.
These can be assembled ahead and refrigerated before baking.
Serve warm with a dipping sauce like marinara or garlic yogurt.
