These chewy chocolate chip granola bars are soft, sweet, and packed with oats, crispy rice cereal, and almonds. They’re an easy make-ahead snack that’s perfect for lunchboxes, breakfasts, or an on-the-go treat.

Ingredients

  • 6 tablespoons unsalted butter
  • 1/3 cup packed dark brown sugar
  • ¼ cup plus 2 tablespoons honey
  • 1½ teaspoons vanilla extract
  • Heaping ⅛ teaspoon salt
  • 2 cups quick-cooking/instant oats
  • 1¾ cups crispy rice cereal
  • ½ cup sliced almonds
  • ¼ cup flax meal or wheat germ
  • 1/3 cup mini chocolate chips

Instructions

  1. Line a 9 x 13-inch baking pan with aluminum foil and lightly coat with nonstick cooking spray.
  2. In a large saucepan, combine the butter, brown sugar, and honey. Bring to a boil over medium-high heat, stirring constantly. Reduce the heat and simmer for about 2 minutes, until the sugar has dissolved and the mixture has slightly thickened.
  3. Remove the pan from the heat and stir in the vanilla extract and salt.
  4. Add the quick oats, crispy rice cereal, sliced almonds, and flax meal or wheat germ. Fold together until evenly coated.
  5. Transfer the mixture to the prepared pan and press it down evenly with a rubber spatula. Sprinkle the mini chocolate chips over the top and press firmly so they adhere to the bars.
  6. Refrigerate for 1½ to 2 hours, or until completely firm.
  7. Lift the bars out using the foil overhang, transfer to a cutting board, and cut into 18 rectangles.
  8. Store the bars in an airtight container in the refrigerator, separating layers with parchment paper or foil if stacking.

Notes

  • Use only quick-cooking or instant oats for the best chewy texture.
  • Flax meal and wheat germ can be used interchangeably.
  • Press the mixture firmly into the pan to help the bars hold together.
  • Keep refrigerated for the best texture and easier slicing.
  • Store in an airtight container for up to 1 week.
