Classic chicken and dumplings with tender chicken, vegetables, a creamy savory broth, and soft homemade dumplings.

Ingredients

  • 2 tablespoons olive oil
  • 2 ribs celery, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 5 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 4 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 2 cups all-purpose flour, for dumplings
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt, for dumplings
  • 3/4 cup milk
  • 4 tablespoons butter, melted

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the celery, carrots, and onion and cook until softened. Add the garlic and cook briefly until fragrant.
  2. Add the butter and allow it to melt. Stir in the flour and cook for about 1 minute.
  3. Gradually stir in the chicken broth, mixing until smooth. Add the cream, cooked chicken, thyme, salt, and pepper. Bring the mixture to a gentle simmer.
  4. For the dumplings, combine the flour, baking powder, and salt in a bowl. Stir in the milk and melted butter just until a soft dough forms.
  5. Drop spoonfuls of dumpling dough over the simmering chicken mixture, leaving a little space between them.
  6. Cover the pot and cook over low heat without lifting the lid until the dumplings are fluffy and cooked through.
  7. Check the seasoning and serve the chicken and dumplings warm.

Notes

  • Do not overmix the dumpling dough or the dumplings may become dense.
  • Avoid lifting the lid while the dumplings cook so they can steam properly.
  • Rotisserie or other leftover cooked chicken works well for this recipe.
  • Store leftovers covered in the refrigerator and reheat gently, adding a splash of broth if needed.
