These chicken burrito bowls are a flavorful and convenient meal prep option loaded with seasoned chicken, Spanish rice, black beans, and cheese. Perfect for freezing or enjoying throughout the week.

Ingredients

  • 8 single serve bowls or containers
  • 6 cups cooked Spanish rice
  • 1 1/2 lbs boneless, skinless chicken breast filets
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tbsp olive oil
  • 2 (15 oz) cans black beans
  • 1 cup cheddar or pepper jack cheese, shredded
  • 1/2 cup salsa (optional)
  • lettuce
  • sour cream
  • cilantro
  • avocado

Instructions

  1. Cook the Spanish rice according to package directions and allow it to cool.
  2. Trim fat from the chicken filets and cut them in half lengthwise.
  3. Mix chili powder, cumin, salt, and pepper in a small bowl. Season chicken on both sides with the spice mixture.
  4. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 4–5 minutes per side until fully cooked. Remove, let rest for 5 minutes, then slice into thin strips.
  5. Drain and rinse black beans using a fine mesh strainer until water runs clear. Let them drain კარგად.
  6. Place 8 bowls on your work surface.
  7. Divide the rice evenly among the bowls.
  8. If using salsa, add about 1 tablespoon over the rice in each bowl.
  9. Sprinkle about 2 tablespoons of shredded cheese into each bowl.
  10. Evenly distribute sliced chicken among the bowls.
  11. Add about 1/4 cup black beans to each bowl.
  12. Seal bowls with airtight lids or wrap tightly with plastic wrap and foil. Store in fridge up to one week or freeze.
  13. To reheat from fridge: Microwave covered for 1 minute, stir, then heat an additional 30 seconds to 1 minute until hot.
  14. To reheat from freezer: Microwave covered for 1 minute 30 seconds, stir, then heat another 1 minute 30 seconds until hot.
  15. Add desired toppings like lettuce, sour cream, cilantro, and avocado before serving.
