Chicken Nachos

Loaded chicken nachos layered with seasoned chicken, creamy queso blanco, Monterey Jack, black beans, jalapeños, and fresh toppings. An easy, crowd-pleasing sheet pan meal ready in about 35 minutes.

Ingredients

  • 1 large chicken breast (cooked, chopped into small bite-sized pieces)
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons fajita seasoning
  • 18 ounces tortilla chips
  • 8 ounces queso blanco
  • 4 ounces Monterey Jack, shredded
  • 3 tablespoons jarred jalapeños
  • ½ cup chopped red onion
  • ⅛ cup green onion, chopped
  • ⅛ cup cilantro, chopped
  • ½ can black beans, drained
  • 1 tomato, chopped
  • ½ cup sour cream
  • ½ teaspoon sea salt, cracked over the top of the sheet pan

Instructions

  1. For baked chicken, preheat the oven to 400°F.
  2. Place the chicken breast in a baking dish. Brush both sides with olive oil and sprinkle with fajita seasoning. Bake for 20 minutes or until cooked through. Reduce the oven temperature to 350°F.
  3. Alternatively, to sauté the chicken, heat the olive oil in a frying pan over medium-high heat. Cut the chicken into smaller pieces and season with fajita seasoning.
  4. Add the seasoned chicken to the hot skillet and cook for approximately 6-7 minutes, turning as needed, until golden brown and cooked through.
  5. Remove the cooked chicken from the oven or pan and allow it to rest for 10 minutes, then slice or dice into bite-sized pieces.
  6. Spread the tortilla chips evenly over a large sheet pan.
  7. Drizzle the chips with queso blanco, then add the Monterey Jack, chicken, jalapeños, red onion, green onion, cilantro, and black beans.
  8. Bake at 350°F for 10 minutes, until the cheese is melted and the nachos are heated through.
  9. Remove from the oven and top with chopped tomato, sour cream, additional toppings of your choice, and a few cracks of sea salt. Serve immediately.

Notes

  • The chicken can be baked or sautéed depending on your preferred cooking method.
  • For the best texture, add fresh tomato, sour cream, and other cold toppings after baking.
  • Serve immediately while the cheese is hot and the tortilla chips are crisp.
  • Add extra jalapeños or your favorite hot sauce for spicier nachos.
