Chimichurri Steak

Juicy pan-seared steak topped with a vibrant homemade chimichurri packed with fresh parsley, garlic, shallot, oregano and red wine vinegar. A quick and flavorful steak dinner ready in just 25 minutes.

Ingredients

  • 1/3 cup / 80ml Extra Virgin Olive Oil
  • 1 small bunch of Fresh Parsley, finely diced (1oz/30g)
  • 2 tbsp Red Wine Vinegar
  • 23 cloves of Garlic, finely diced
  • 1 Shallot, very finely diced
  • 1 tsp Dried Oregano
  • 1/4 tsp Salt, or to taste
  • 1/81/4 tsp Chilli Flakes
  • 1/8 tsp Black Pepper, or to taste
  • 1 tbsp Vegetable Oil
  • 2x Steaks of choice, at room temperature
  • 2 tbsp / 30g Unsalted Butter
  • Salt & Black Pepper, as needed
  • Fries, Mash or Side(s) of choice, to serve

Instructions

  1. Add the extra virgin olive oil, parsley, red wine vinegar, garlic, shallot, oregano, salt, chilli flakes and black pepper to a medium-sized mixing bowl. Whisk well, check the seasoning and adjust if needed, then set aside.
  2. Pat the steaks dry with paper towels to remove excess moisture, then generously season both sides with salt and black pepper.
  3. Place a large heavy-based or cast-iron pan over high heat. Once very hot, add the vegetable oil and leave for 5-10 seconds before carefully adding the steaks.
  4. For steaks around 3/4 inch / 2cm thick cooked medium-rare, fry for 2 minutes on the first side, then flip and cook for another minute.
  5. Add the butter and baste the steaks with the melted butter for a further minute. Remove from the pan and rest on a plate for at least 5 minutes to help retain their juices.
  6. Give the chimichurri a final whisk. Thinly slice the rested steaks, spoon over your preferred amount of chimichurri and serve with fries, mash or your sides of choice.

Notes

  • Bring the steaks to room temperature before cooking for more even results.
  • Cooking times will vary depending on the thickness of the steaks and your preferred level of doneness.
  • Patting the steaks thoroughly dry helps develop a better seared crust.
  • Allow the cooked steaks to rest for at least 5 minutes before slicing.
  • Serve with fries, mashed potatoes or your preferred side dishes.
