Ingredients
1 package (about 9 oz) vanilla wafer cookies, or chocolate wafer cookies
12 oz chocolate melting wafers, milk chocolate, dark chocolate, or white chocolate
1 tablespoon coconut oil or shortening, optional, for thinning the chocolate
1/4 cup sprinkles, crushed nuts, or cookie crumbs, optional, for decorating
Instructions
Line a large baking sheet with parchment paper or wax paper and set aside.
Place the chocolate melting wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth.
If the melted chocolate is too thick for dipping, stir in a small amount of coconut oil or shortening until it reaches a smooth consistency.
Using a fork or dipping tool, dip each wafer cookie into the melted chocolate, turning to coat completely.
Lift the cookie out of the chocolate and gently tap the fork against the side of the bowl to remove excess chocolate.
Transfer the chocolate-covered wafer cookie to the prepared baking sheet. Repeat with the remaining cookies.
While the chocolate is still wet, decorate with sprinkles, crushed nuts, cookie crumbs, or a drizzle of contrasting melted chocolate, if desired.
Allow the cookies to sit at room temperature until the chocolate has completely hardened, or refrigerate for 10–15 minutes to speed up the setting process.
Once the chocolate has set, carefully remove the cookies from the parchment paper and serve or store in an airtight container.
Notes
Chocolate options: Milk chocolate, dark chocolate, white chocolate, or colored candy melts all work well for coating wafer cookies.
Melting tip: Heat chocolate slowly and stir frequently to prevent overheating or scorching.
Decorating ideas: Add holiday sprinkles, crushed peppermint candies, chopped nuts, shredded coconut, or a contrasting chocolate drizzle before the coating sets.
Cookie variations: Use vanilla, chocolate, or strawberry cream-filled wafer cookies for different flavors.
Storage: Store in an airtight container in a cool, dry place for up to 1 week, depending on the freshness of the wafers and the type of chocolate used.
Freezing: Freeze the fully set cookies in an airtight freezer-safe container for up to 2 months. Thaw in the container to help reduce condensation.
For the smoothest coating, use chocolate melting wafers or candy melts, which are specifically designed for dipping.
