Ingredients
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
½ cup (100g) brown sugar, packed
2 large eggs
1 tsp vanilla extract
2 cups (250g) all-purpose flour
½ cup (40g) unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
1 ½ cups (270g) semisweet chocolate chips
1 cup mini marshmallows
Instructions
Preheat & Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Wet Ingredients: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
Make the Dough: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
Add Marshmallow Swirls: Gently fold in the mini marshmallows, being careful not to overmix.
Shape & Bake: Scoop tablespoon-sized dough balls onto the baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes or until the edges are set.
Cool & Serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container!
Notes
For extra gooey cookies, slightly underbake them and let them set on the tray.
You can use marshmallow fluff instead of mini marshmallows for an even more swirled effect.
Try adding a pinch of espresso powder to enhance the chocolate flavor!
