Ingredients
3 ripe bananas
1/3 cup natural peanut butter
1/2 cup dark chocolate chips
2 teaspoons coconut oil
Instructions
Peel and slice the bananas into rounds about 1/4 inch thick.
Line a platter or small baking sheet with parchment paper.
Spread about 1/2 teaspoon peanut butter onto one banana slice and top with another slice to create a sandwich. Repeat until all banana slices are used, making about 30 bites.
Arrange the bites on parchment-lined platters and freeze for about 1 hour until firm.
Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 1 minute, stir, then continue heating in 30-second intervals until fully melted.
Remove one platter of frozen banana bites from the freezer and dip each bite halfway into the melted chocolate.
Return the dipped bites to the parchment-lined platter and repeat with the remaining bites.
