This Italian Chocolate Salami is a rich, no-bake dessert made with dark chocolate, crunchy cookies, toasted almonds, and a splash of sweet Marsala wine. Shaped into logs and chilled until firm, it’s a delicious make-ahead treat that’s perfect for slicing and sharing.

Ingredients

  • 8 ounces (226 grams) dark chocolate
  • 10 ounces (283 grams) sweet cookies (a mixture of crunchy amaretti cookies, plain sweet cookies, digestive biscuits, or vanilla wafers)
  • 4 ounces (1 stick or 113 grams) unsalted butter, softened
  • 1 cup (110 grams) powdered (icing) sugar, sifted
  • ½ cup (35 grams) cocoa powder
  • ⅓ cup (80 ml) sweet Marsala wine (or milk)
  • ⅓ cup (30 grams) chopped toasted almonds

Instructions

  1. Chop the dark chocolate and place it in a heatproof bowl set over a saucepan of barely simmering water. Make sure the water does not touch the bottom of the bowl. Stir occasionally until the chocolate is completely melted. Remove from the heat and set aside to cool slightly.
  2. Break the cookies into rough, bite-sized pieces using your hands. Avoid using a blender or food processor, as the cookies should retain their crunchy texture. Set aside.
  3. In a large mixing bowl, beat the softened butter and sifted powdered sugar together with a wooden spoon until smooth, creamy, and well combined.
  4. Gradually stir in the cocoa powder and sweet Marsala wine, mixing until incorporated.
  5. Add the slightly cooled melted chocolate to the butter mixture and stir until smooth and fully combined.
  6. Fold in the broken cookies and chopped toasted almonds, mixing thoroughly until the pieces are evenly coated with the chocolate mixture.
  7. Prepare two large pieces of plastic wrap, doubling each piece for extra strength.
  8. Divide the chocolate mixture evenly between the two sheets of plastic wrap. Shape each portion into a long, thick log resembling a salami.
  9. Roll each log tightly in the plastic wrap, pressing gently to create a firm, even cylindrical shape. Twist both ends of the plastic wrap securely to seal.
  10. Place the wrapped chocolate salami logs on a baking tray to help maintain their shape. Transfer to the refrigerator.
  11. After 30 minutes, check the logs. If they have lost their round shape, gently reshape them and tighten the twisted ends of the plastic wrap.
  12. Refrigerate for at least 3 hours, or preferably overnight, until completely firm.
  13. When ready to serve, remove the plastic wrap. If desired, lightly dust the chocolate salami with additional sifted powdered sugar to create the traditional salami-like appearance.
  14. Slice into rounds using a sharp knife and serve chilled. Keep any remaining chocolate salami refrigerated to maintain its shape.

Notes

  • Cookie options: Use a combination of amaretti cookies, digestive biscuits, vanilla wafers, or other crunchy sweet cookies for the best flavor and texture.
  • Alcohol-free option: Replace the sweet Marsala wine with an equal amount of milk for a family-friendly version.
  • Chocolate tip: Allow the melted chocolate to cool slightly before mixing it with the butter to prevent the butter from melting excessively.
  • Texture tip: Break the cookies by hand rather than crushing them into fine crumbs. Larger pieces create the distinctive marbled appearance when sliced.
  • Shaping tip: Wrap the logs tightly and reshape them after 30 minutes of refrigeration if necessary.
  • Make ahead: Prepare the chocolate salami the day before serving and refrigerate overnight for the best texture.
  • Storage: Store tightly wrapped in the refrigerator for up to 5 days.
  • Freezing: Wrap the logs securely in plastic wrap and place them in a freezer-safe container or bag. Freeze for up to 2 months. Thaw in the refrigerator before slicing.
  • Serving suggestion: Dust with powdered sugar before slicing to resemble traditional Italian salami. Serve chilled with coffee or espresso.
  • Nutrition values are approximate and calculated per serving using Marsala wine and the listed ingredients, excluding optional powdered sugar for dusting.
