Ingredients
1 cup (227g) unsalted or salted butter
1 cup (220g) packed light or dark brown sugar
40 salted saltine crackers (about 1 sleeve)
1 pkg (270g-300g) milk or semi-sweet chocolate chips
Additional toppings like nuts, candy, or sprinkles (optional)
Instructions
Preheat the oven to 350°F. Line a large baking sheet with heavy-duty aluminum foil. If using regular foil, spray it with non-stick cooking spray. Arrange the saltine crackers in a single layer and fold up the edges of the foil to contain the toffee.
In a medium saucepan, melt the butter and brown sugar over medium heat. Bring to a rolling boil, then reduce the heat to medium-low and boil for 5 minutes, stirring frequently.
Quickly pour the hot toffee mixture over the crackers and spread it evenly to completely cover them.
Bake for 5 minutes. Turn off the oven, remove the baking sheet, and immediately sprinkle the chocolate chips evenly over the hot toffee.
Let the chocolate stand for 1-2 minutes, until shiny and softened, then spread it evenly over the toffee. If the chocolate is not soft enough to spread after about 4 minutes, return the baking sheet to the warm oven for 1 minute.
Add nuts, candy, sprinkles, or other desired toppings while the chocolate is still soft.
Chill in the refrigerator for 1-2 hours, or until completely firm. Peel away the foil, break the toffee into pieces, and serve.
Notes
Heavy-duty aluminum foil makes the finished toffee easier to remove from the pan.
Milk chocolate or semi-sweet chocolate chips can be used depending on your preferred sweetness.
Optional toppings include chopped nuts, crushed candy, holiday sprinkles, or toffee pieces.
