Cilantro Lime Corn

A quick and flavorful skillet corn tossed with fresh lime, cilantro, warm spices, and salty cotija or feta cheese. This easy side dish is ready in just 15 minutes.

Ingredients

  • 2 tablespoons butter (salted or unsalted is okay)
  • 2 15-ounce cans of whole kernel corn (drained)
  • 1 tablespoon lime juice (preferably fresh)
  • ½ teaspoon paprika
  • ¼ teaspoon table salt
  • ¼ teaspoon crushed red pepper flakes
  • ¼ cup finely chopped cilantro (very loosely packed)
  • ¼ cup crumbled cotija or feta cheese

Instructions

  1. In a large skillet, melt the butter over medium-high heat.
  2. Once the butter is melted, add the drained corn, lime juice, paprika, salt, and crushed red pepper flakes.
  3. Cook, stirring often, until most of the liquid in the pan has evaporated and the corn is heated through.
  4. Remove from the heat and stir in the cilantro. Sprinkle the cheese over the top, then taste and add additional salt if needed.
  5. Serve warm and enjoy.

Notes

  • Fresh lime juice provides the brightest flavor.
  • Either cotija or feta cheese works well in this recipe.
  • Adjust the crushed red pepper flakes to taste for more or less heat.
  • Store leftovers in an airtight container in the refrigerator and reheat gently before serving.
