Ingredients
10 cups air popped popcorn
3/4 cup granulated sugar
1/4 cup light agave
3 Tblsp coconut oil
2 tsp maca powder
1 tsp cinnamon powder
salt to taste
1 tsp almond extract
1/2 tsp baking soda
Instructions
Line a large rimmed baking sheet with parchment paper and preheat oven to 250 degrees.
Prepare the popcorn and place it in a large bowl.
In a saucepan, combine granulated sugar, agave, coconut oil, maca powder, cinnamon, and salt. Bring to a boil, stirring constantly for 3–5 minutes until the mixture reaches 150 degrees.
Remove from heat and quickly stir in almond extract and baking soda. Immediately pour the mixture over the popcorn and toss to coat evenly.
Spread the coated popcorn onto the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes.
Remove from oven and cool completely on wire racks.
Store in an airtight container.
