Cinnamon Roll Pancakes

These cinnamon roll pancakes combine fluffy pancakes with a sweet cinnamon swirl and a creamy cream cheese glaze. They are a cozy breakfast treat perfect for sharing.

Ingredients

  • 1 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk ((may need to add a little more if batter is too thick))
  • 1 Tablespoon vegetable oil
  • 1 large egg (beaten)
  • OR use pancake batter from a mix (we like Bisquick)
  • 1/3 cup butter (melted)
  • 3/4 cup packed light brown sugar
  • 1 Tablespoon ground cinnamon
  • 4 Tablespoons butter
  • 2 ounces cream cheese
  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the cinnamon filling first by mixing butter, brown sugar, and cinnamon in a medium bowl. Scoop the filling into a small zip bag and let it rest for 10 to 15 minutes until slightly thickened.
  2. Prepare the pancake batter by whisking together flour, baking powder, and salt in a medium bowl. Whisk in milk, oil, and egg until just combined; a few small lumps are fine.
  3. If using boxed pancake mix, prepare it according to the package directions.
  4. Prepare the cream cheese glaze by heating butter and cream cheese in a microwave-safe bowl until melted. Whisk until smooth, then add powdered sugar and vanilla and mix well. Set aside.
  5. Heat a large skillet or griddle over low heat and spray with non-stick cooking spray. Pour about 1/2 cup of pancake batter onto the skillet.
  6. Cut the corner of the cinnamon filling bag and squeeze a spiral of filling onto the top of each pancake. When bubbles appear on the surface, carefully flip and cook for 1 to 2 minutes more until lightly browned.
  7. Transfer cooked pancakes to a baking sheet and keep warm while preparing the remaining pancakes.
  8. Spoon warmed cream cheese glaze over each pancake before serving.

Notes

  • Add a little extra milk if the pancake batter is too thick.
  • Keep finished pancakes warm in a low oven while cooking the remaining batch.
  • Serve with extra cinnamon filling or glaze if desired.
