Ingredients
1 ¼ cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk ((may need to add a little more if batter is too thick))
1 Tablespoon vegetable oil
1 large egg (beaten)
OR use pancake batter from a mix (we like Bisquick)
1/3 cup butter (melted)
3/4 cup packed light brown sugar
1 Tablespoon ground cinnamon
4 Tablespoons butter
2 ounces cream cheese
1 1/4 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Prepare the cinnamon filling first by mixing butter, brown sugar, and cinnamon in a medium bowl. Scoop the filling into a small zip bag and let it rest for 10 to 15 minutes until slightly thickened.
Prepare the pancake batter by whisking together flour, baking powder, and salt in a medium bowl. Whisk in milk, oil, and egg until just combined; a few small lumps are fine.
If using boxed pancake mix, prepare it according to the package directions.
Prepare the cream cheese glaze by heating butter and cream cheese in a microwave-safe bowl until melted. Whisk until smooth, then add powdered sugar and vanilla and mix well. Set aside.
Heat a large skillet or griddle over low heat and spray with non-stick cooking spray. Pour about 1/2 cup of pancake batter onto the skillet.
Cut the corner of the cinnamon filling bag and squeeze a spiral of filling onto the top of each pancake. When bubbles appear on the surface, carefully flip and cook for 1 to 2 minutes more until lightly browned.
Transfer cooked pancakes to a baking sheet and keep warm while preparing the remaining pancakes.
Spoon warmed cream cheese glaze over each pancake before serving.
Notes
Add a little extra milk if the pancake batter is too thick.
Keep finished pancakes warm in a low oven while cooking the remaining batch.
Serve with extra cinnamon filling or glaze if desired.
