This Coconut Curry Baked Cod is a flavorful and easy-to-make dish that combines the richness of coconut milk with the aromatic spices of curry. Baked to perfection, this healthy and comforting recipe makes for a delicious seafood dinner that is both satisfying and simple.

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 can (14 oz) coconut milk (full-fat or light)
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • In a bowl, whisk together the coconut milk, curry powder, turmeric powder, ground ginger, garlic powder, lime juice, olive oil, salt, and pepper.
  • Place the cod fillets on the prepared baking sheet.
  • Pour the coconut curry sauce over the fillets, making sure they are evenly coated.
  • Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
  • Remove from the oven and garnish with fresh cilantro and lime wedges, if desired.
  • Serve with rice or vegetables of your choice for a complete meal.

Notes

  • For a bit of heat, you can add a pinch of cayenne pepper or red pepper flakes to the curry sauce.
