This Confetti Chicken Big Bowl is a colorful, comforting soup packed with tender chicken, vegetables, ramen noodles, and fragrant Thai-inspired flavors. Coconut milk, curry paste, herbs, and lime create a deliciously balanced bowl.

Ingredients

  • 1 pound boneless skinless chicken breasts (cut into 1-inch pieces)
  • 2 tablespoons vegetable oil
  • 8 cloves garlic (minced)
  • 4 teaspoons fresh ginger (minced)
  • 1 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 4 cups water
  • 14 ounces unsweetened coconut milk
  • 2 cups shredded carrots (4 medium)
  • 2 cups small broccoli florets
  • 1 cup red sweet pepper strips (1 medium)
  • 6 ounces chicken-flavor ramen noodles (broken, 2, 3 ounce packages)
  • 2 cups snow pea pods
  • 2 tablespoons soy sauce
  • 4 teaspoons lime juice
  • 1 cups fresh basil (finely cut)
  • 1/3 cups fresh cilantro (chopped)

Instructions

  1. In a large soup pot, cook chicken in 1 tablespoon oil over medium-high heat for 3-4 minutes until no longer pink. Remove from pot and set aside.
  2. Add the remaining 1 tablespoon of oil to the pot. Add garlic, ginger, curry paste, and cumin. Cook and stir for 30 seconds.
  3. Stir in water, coconut milk, carrots, broccoli, red pepper, and noodles without the seasoning packets. Bring to a boil, reduce heat to a simmer, and cook for 3 minutes.
  4. Stir in cooked chicken, snow pea pods, 1 seasoning packet (discard the other), soy sauce, and lime juice.
  5. Stir in basil and cilantro. Serve hot in soup bowls.

Notes

  • Use fresh vegetables for the best texture and flavor.
  • Adjust the amount of red curry paste to control the spice level.
