Ingredients
12 ounce rotini pasta, cooked, drained and cooled
1 pound ground beef, cooked and crumbled (drain any excess grease and allow it to cool slightly)
1 Tablespoon taco seasoning
1 cup mayonnaise
½ cup sour cream
1 packet ranch seasoning mix
½ cup finely diced red onion
1 cup halved cherry tomatoes
1 cup shredded cheddar cheese
9.25 ounces bag Cool Ranch Doritos, lightly crushed
2 Tablespoons sliced green onions
Instructions
In a large bowl, combine the cooked and cooled rotini pasta, cooked and slightly cooled ground beef, cherry tomatoes, red onion, and shredded cheddar cheese.
In a smaller bowl, whisk together the mayonnaise, sour cream, taco seasoning, and ranch seasoning mix until smooth and creamy.
Pour the dressing over the pasta mixture and stir until everything is evenly coated.
Cover and refrigerate for at least 1 hour to allow the flavors to come together.
Just before serving, stir about half of the lightly crushed Cool Ranch Doritos into the pasta salad.
Top with the remaining crushed Doritos and sliced green onions, then serve.
Notes
Allow the cooked ground beef to cool slightly before adding it so it does not melt the cheese or affect the texture of the dressing.
Add the Doritos just before serving to keep them crunchy.
Store leftovers covered in the refrigerator, keeping extra crushed Doritos separate when possible.
