Cranberry Orange Cookies

Soft cranberry-orange cookies with bright citrus flavor, chewy dried cranberries, and a sweet orange glaze.

Ingredients

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon grated orange zest
  • 2 tablespoons orange juice
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chopped cranberries
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon grated orange zest, for glaze
  • 3 tablespoons orange juice, for glaze
  • 1 1/2 cups confectioners’ sugar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cream together the softened butter, white sugar, and brown sugar until smooth. Beat in the egg, 1 teaspoon orange zest, and 2 tablespoons orange juice until well combined.
  3. Combine the flour, baking soda, and salt in a separate bowl. Gradually stir the dry ingredients into the butter mixture.
  4. Fold in the cranberries and walnuts until evenly distributed.
  5. Drop rounded spoonfuls of dough onto ungreased cookie sheets.
  6. Bake in the preheated oven until the edges are golden, about 12 to 14 minutes. Transfer the cookies to wire racks to cool.
  7. Make the glaze by mixing 1/2 teaspoon orange zest, 3 tablespoons orange juice, and confectioners’ sugar until smooth.
  8. Spread or drizzle the orange glaze over the cooled cookies and allow it to set before serving.

Notes

  • Allow the cookies to cool before glazing so the glaze stays thick and sets properly.
  • Chop the cranberries and walnuts into fairly small pieces for even distribution.
  • Store cooled cookies in an airtight container at room temperature.
