Cream Cheese Chicken is a quick and comforting skillet meal featuring tender chicken in a rich garlic parmesan cream sauce. This easy dinner is perfect for busy nights and pairs beautifully with pasta, rice, potatoes, or vegetables.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large shallot, diced
  • 4 cloves garlic, minced
  • 2 large boneless skinless chicken breasts, cut into strips across
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 8 ounces cream cheese, diced
  • ½ cup white wine or white cooking wine (or substitute chicken broth)
  • 1 tablespoon fresh parsley, chopped
  • ¼ cup freshly grated parmesan

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced shallot and cook for 2-3 minutes until soft and translucent.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the chicken strips to the skillet and season with salt and black pepper. Cook for about 3½ minutes, then turn the chicken and cook for another 3 minutes or until fully cooked through.
  4. Reduce the heat to low and remove the chicken from the skillet. Add the white wine and diced cream cheese to the pan. Stir continuously until the cream cheese melts and the sauce becomes smooth. Add more wine or chicken broth if needed to adjust the consistency.
  5. Return the chicken to the skillet and toss until fully coated in the creamy sauce. Garnish with fresh parsley and grated parmesan before serving.

Notes

  • Boneless skinless chicken thighs can be used instead of chicken breasts for extra moisture and flavor.
  • Replace white wine with chicken broth for a wine-free version.
  • Add spinach, mushrooms, broccoli, sun-dried tomatoes, or herbs for extra flavor and texture.
  • For a lighter sauce, use reduced-fat cream cheese and add more chicken broth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently over low heat with a splash of broth or water to prevent the cream sauce from separating.
