Ingredients

  • 2 cups frozen or canned corn (drained)
  • 1 cup cream cheese, softened
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded pepper jack cheese
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional for extra spice)
  • 1 small jalapeño, finely diced (optional)
  • ½ cup cooked  meat, crumbled (your choice of option)
  • ¼ cup chopped green onions
  • 1 tablespoon butter
  • Salt & black pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, melt butter over medium heat. Add corn and sauté for 3–4 minutes until slightly golden.
  • In a mixing bowl, combine cream cheese, sour cream, Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper. Mix until smooth.
  • Stir in sautéed corn, cheddar cheese, pepper jack cheese, diced jalapeño, and crumbled halal-friendly meat.
  • Transfer the mixture to a baking dish and spread evenly.
  • Bake for 20 minutes, or until hot and bubbly.
  • Garnish with chopped green onions and serve warm with tortilla chips or crackers.

Notes

  • For a milder version, reduce or omit the jalapeño and cayenne pepper.
  • If you prefer a dip with more texture, use fire-roasted corn for a smoky flavor.
  • Make it extra creamy by adding ¼ cup mayonnaise.
  • Can be served hot or cold, but warm is best for melty, cheesy goodness!
