Ingredients
400 ml double cream
250 ml full-fat milk
100 ml eggnog
75 g caster sugar
3 gelatine leaves
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
200 g mixed berries
100 ml red wine
40 g light brown sugar
1 cinnamon stick
2 whole cloves
1 star anise
1 tablespoon orange juice
1 teaspoon orange zest
Instructions
Soak the gelatine leaves in cold water for 5 minutes until softened.
Combine the double cream, milk, eggnog, caster sugar, vanilla extract, nutmeg, and ground cinnamon in a saucepan.
Heat gently, stirring until the sugar dissolves. Do not boil.
Remove from the heat. Squeeze excess water from the gelatine and stir into the warm cream mixture until dissolved.
Divide between 6 serving glasses or panna cotta moulds. Refrigerate for at least 4 hours until set.
For the compote, combine the red wine, brown sugar, cinnamon stick, cloves, star anise, orange juice, and orange zest in a saucepan.
Simmer gently for 5 minutes to infuse the spices.
Add the mixed berries and simmer for another 8 to 10 minutes until softened and slightly syrupy.
Remove the whole spices and allow the compote to cool.
Serve the chilled panna cottas topped with the mulled berry compote.
