Ingredients
7 ounces marshmallow creme
1 ½ cups white sugar
⅔ cup evaporated milk
¼ cup butter
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups milk chocolate chips
1 cup semisweet chocolate chips
1/2 cup chopped nuts (optional)
Instructions
Measure out all ingredients before starting, as the recipe moves quickly once cooking begins.
Line a pan with buttered parchment paper or aluminum foil, leaving enough overhang on the sides to lift out the fudge. Set aside.
Add the marshmallow creme, sugar, salt, butter, vanilla extract, and evaporated milk to a heavy-bottomed pot.
Attach a candy thermometer to the edge of the pot, making sure it does not touch the bottom.
Cook the mixture over medium heat, stirring constantly to prevent scorching.
Cook until the mixture reaches 220 degrees Fahrenheit, about 4 minutes, then immediately remove the pot from the heat.
Immediately add the milk chocolate chips and semisweet chocolate chips, along with the chopped nuts if using. Stir rapidly just until the chocolate is completely melted and smooth. Avoid overmixing, which can cause crystallization.
Immediately pour the fudge mixture into the prepared pan and allow it to cool until partially set.
Use the parchment or foil overhang to lift the fudge from the pan, then allow it to cool completely to room temperature.
Once completely set, cut the fudge into 48 squares and serve.
