These crispy baked fish tacos feature golden panko-coated fish, creamy chipotle crema, fresh slaw, and avocado wrapped in warm tortillas. A flavorful and satisfying taco meal perfect for sharing.

Ingredients

  • 1/2 cup plain Greek yogurt (or mayo)
  • 1 chipotle chile in adobo sauce
  • 1 tablespoon lime juice
  • 1/4 teaspoon fine sea salt
  • 1 cup panko breadcrumbs
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly-cracked black pepper
  • 1 egg (whisked)
  • 1 1/2 pounds firm white fish (such as cod or halibut, cut into 2-inch pieces)
  • 12 corn or flour tortillas (warmed)
  • 2 fresh avocados (peeled, pitted and sliced)
  • 1 batch Cilantro Lime Slaw
  • Optional toppings: chopped fresh cilantro, sliced jalapeños, crumbled queso fresco, sliced radishes, sliced red onions

Instructions

  1. Combine Greek yogurt or mayo, chipotle chile in adobo sauce, lime juice, and salt in a blender. Puree until smooth and set aside for the chipotle crema.
  2. Prepare the Cilantro Lime Slaw according to the recipe directions.
  3. Heat oven to 375°F. Spread panko breadcrumbs evenly on a baking sheet and bake for 5-7 minutes, shaking the pan halfway through, until toasted and golden. Transfer panko to a bowl.
  4. Add chili powder, garlic powder, cumin, salt, and pepper to the toasted panko and mix until combined.
  5. Dip each piece of fish into the whisked egg, then coat with the panko mixture. Place coated fish on a parchment-covered baking sheet.
  6. Bake the fish for 10 minutes, or until cooked through, opaque, and flaky. The internal temperature should reach 145°F. Flake the fish into smaller pieces.
  7. Fill warmed tortillas with slaw, baked fish, avocado, and desired toppings. Drizzle with chipotle crema and serve immediately.

Notes

  • Use cod, halibut, or another firm white fish for the best texture.
  • Keep a close eye on the panko while toasting to prevent burning.
  • Serve tacos immediately for the crispiest fish coating.
