These crispy broccoli bites are golden, cheesy, and packed with flavor, making them a perfect snack or side dish. Served with a creamy dipping sauce, they’re a crowd-pleasing favorite.

Ingredients

  • 2 cups fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray or olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. Finely chop the broccoli into small crumbles and pat dry.
  2. In a large bowl, combine the broccoli, cheddar cheese, panko breadcrumbs, minced garlic, onion powder, garlic powder, salt, pepper, and eggs. Mix until well combined.
  3. Scoop about 1.5 tablespoons of the mixture and roll into compact balls. Place on the prepared baking sheet.
  4. Lightly spray or drizzle with olive oil and bake for 20–25 minutes, flipping halfway through, until golden brown.
  5. Broil for 2–3 minutes for extra crispiness.
  6. Remove from oven and let rest for 2–3 minutes.
  7. Garnish with fresh parsley and serve warm.

Notes

  • Ensure broccoli is dry to help the bites crisp properly.
  • You can substitute cheddar with mozzarella or a dairy-free alternative.
  • Serve with your favorite dipping sauce such as ranch, sour cream, or yogurt-based dips.
  • Store leftovers in the refrigerator for up to 3 days and reheat in the oven for best texture.
  • For extra crunch, use an air fryer at 375°F for about 12–15 minutes.
