Crispy Cheddar Chicken – Baked

A deliciously baked alternative to fried chicken, this Crispy Cheddar Chicken is coated in cheese and Ritz crackers, then topped with a creamy sauce for the ultimate comfort meal.

Ingredients

  • 2 lb chicken tenders or 4 large chicken breasts
  • 2 sleeves Ritz crackers
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup whole milk (or 2%)
  • 3 cups cheddar cheese, grated
  • 1 tsp dried parsley
  • 10 oz can cream of chicken soup
  • 2 tbsp sour cream
  • 2 tbsp butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Crush the Ritz crackers and place them in a small pan. Add salt and pepper to the crumbs and mix well.
  3. If using chicken breasts, cut each breast into 3 large pieces.
  4. Pour the milk, grated cheese, and seasoned cracker crumbs into three separate shallow pans.
  5. Dip each piece of chicken into the milk, then press into the cheese to coat. Press the cheese into the chicken with your fingers.
  6. Next, press the cheesy-coated chicken into the cracker crumbs until well coated.
  7. Spray a 9×13 baking dish with cooking spray and place the coated chicken inside.
  8. Sprinkle dried parsley over the top of the chicken.
  9. Cover the baking dish with foil and bake for 35 minutes.
  10. Remove the foil and bake for an additional 10–15 minutes, or until the edges are golden brown and crispy.
  11. While the chicken bakes, prepare the sauce: In a saucepan over medium-high heat, whisk together the cream of chicken soup, sour cream, and butter until hot and smooth.
  12. Serve the sauce over the crispy cheddar chicken.

Notes

  • Use freshly grated cheddar for best melting and flavor.
  • Chicken tenders cook more evenly and are easier to portion.
  • Store leftovers in an airtight container and reheat in the oven to keep them crispy.
