Sweet, savory, and tangy Crock Pot Root Beer Sloppy Joes made with seasoned ground beef, peppers, onions, and a rich root beer sauce. An easy slow cooker meal perfect for parties, game day, or family dinners.

Ingredients

  • 2 pounds ground beef, browned and crumbled
  • 1/2 small onion, finely diced
  • 1 each green and red bell pepper, finely diced (optional)
  • 3 cloves garlic, minced
  • ¼ cup quick cooking oatmeal
  • 1 cup root beer
  • 1 cup ketchup
  • 2 Tablespoons light brown sugar, packed
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon yellow mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 12 slider buns (can use regular sized buns)
  • Sliced cheese and/or pickles, for serving

Instructions

  1. Add the browned and crumbled ground beef, diced onion, optional green and red bell peppers, minced garlic, and quick cooking oatmeal to a 5-6 quart slow cooker.
  2. In a separate bowl, gently whisk together the root beer, ketchup, brown sugar, Worcestershire sauce, yellow mustard, salt, black pepper, garlic powder, and onion powder. The root beer may fizz while mixing.
  3. Pour the sauce over the beef mixture in the slow cooker and stir to combine. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until everything is heated through and the vegetables are tender.
  4. Toast the slider buns before serving, if desired.
  5. Spoon the sloppy joe mixture onto the buns. Top with sliced cheese and/or pickles as desired and serve warm.

Notes

  • The wet ingredients can be mixed separately to distribute the seasonings evenly, or all of the ingredients except the buns and toppings can be added directly to the slow cooker and stirred together.
  • Because the ground beef is already cooked, the slow cooker primarily warms the mixture, melds the flavors, and softens the peppers and onions.
  • Regular-sized hamburger buns can be substituted for slider buns.
  • Use your favorite root beer for the sauce.
  • Toasting the buns is optional but helps prevent them from becoming soggy.
