Ingredients
1 pound ground beef
1 small onion, diced
1 packet taco seasoning
10 ounce can diced tomatoes with green chilies, drained (Rotel)
1 cup beef broth (can use low or no sodium)
1 cup heavy cream
36 ounce bag refrigerated cheese tortellini
1½ cups shredded Mexican blend cheese
green onions, sliced (for garnish, optional)
Instructions
In a skillet, brown and crumble the ground beef until fully cooked. Drain any excess grease. For softer onions, cook the diced onion with the ground beef.
Add the browned ground beef and diced onion to a 4-6 quart slow cooker.
Stir in the taco seasoning, drained diced tomatoes with green chilies, beef broth, and heavy cream.
Cover and cook on low for 3 hours.
Stir in the refrigerated cheese tortellini. Cover and cook for an additional 30-40 minutes, or until the tortellini is warmed through and tender.
Add the shredded Mexican blend cheese and stir until melted.
Garnish with sliced green onions, if desired, and serve warm.
Notes
Use low-sodium or no-sodium beef broth to reduce the salt content if desired.
For very soft onions, brown them with the ground beef before adding them to the slow cooker.
Add the tortellini near the end of cooking to prevent it from becoming overly soft.
Sliced green onions make an optional fresh garnish.
