Ingredients
1 cup plain yogurt
1 cup finely diced Persian cucumbers (or English/hothouse cucumbers)
2 cloves garlic (crushed)
2 tablespoons minced fresh mint leaves (or 2 teaspoons crushed dried mint leaves)
1 tablespoon fresh lemon juice
1/4 teaspoon salt (plus more to taste)
1 tablespoon extra-virgin olive oil (to drizzle on top)
Instructions
Add the yogurt, diced cucumbers, crushed garlic, mint, lemon juice, and salt to a medium bowl. Stir until well combined.
Cover and refrigerate until ready to serve.
Serve chilled in a shallow bowl and drizzle the extra-virgin olive oil over the top.
Notes
Persian cucumbers can be replaced with English or hothouse cucumbers.
Use 2 teaspoons crushed dried mint in place of the fresh mint if needed.
