Rich and chewy dark chocolate coconut balls made with creamy almond butter, shredded coconut, and maple syrup. A simple no-bake treat with a crisp chocolate coating.

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup, plus 1 tablespoon unsweetened shredded coconut
  • 1 tablespoon maple syrup or agave
  • 1/2 cup dark chocolate chips

Instructions

  1. Combine the almond butter, 1/2 cup coconut, and maple syrup in a mixing bowl. Stir until well combined.
  2. Using your hands, roll the mixture into 12 balls, about 1 tablespoon each. Place them on a sheet pan or plate lined with parchment paper.
  3. Freeze the coconut balls for 20 minutes.
  4. Microwave the dark chocolate chips for 1 minute, then stir until smooth. Microwave for an additional 20 seconds if needed.
  5. Dip each coconut ball in the melted chocolate, then place it back on the parchment paper.
  6. Sprinkle the remaining 1 tablespoon shredded coconut over the chocolate-coated balls.
  7. Freeze for 15 minutes before serving.

Notes

  • Maple syrup or agave can be used as the sweetener.
  • Store the coconut balls in an airtight container in the refrigerator for up to two weeks.
  • For the best texture, keep chilled until ready to serve.
