Ingredients
8 ounces cream cheese (softened)
8 ounces sour cream
1 cup pimento stuffed olives (finely diced)
3 tablespoons olive brine (from jar)
1/2 cup crumbled blue cheese
2 tablespoons diced chives (or green onions)

Instructions
Allow the cream cheese to soften to room temperature. In a medium mixing bowl, combine the cream cheese and sour cream, mixing until completely smooth with no lumps.
Finely dice the pimento stuffed olives and add them to the cream cheese mixture.
Add the olive brine, crumbled blue cheese, and chives. Mix thoroughly, then taste and season with salt and pepper if needed.
Cover and refrigerate until ready to serve. For best flavor, chill for at least 1 hour before serving.
Notes
