Instructions
Preheat the oven to 400°F (200°C). Grease a 12-cup muffin pan or line it with paper liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, baking powder, 1 teaspoon cinnamon, and salt in a large bowl.
In a separate bowl, whisk together the oil, egg, and milk. Stir the wet mixture into the dry ingredients just until combined.
Fold the chopped apples into the batter. Divide the batter evenly among the prepared muffin cups.
Make the topping by combining 1/2 cup sugar, 1/3 cup flour, butter, and 1 1/2 teaspoons cinnamon until the mixture is crumbly.
Sprinkle the cinnamon topping evenly over the muffin batter.
Bake until a toothpick inserted into the center of a muffin comes out clean, about 20 to 25 minutes.
Allow the muffins to cool briefly in the pan before transferring them to a wire rack.
